Sloppy Joes

2 lbs lean ground beef or turkey (I use turkey)
1/2 cup onion
3 cloves of minced garlic
1 1/4 cups ketchup
3/4 cup chopped green pepper
1 cup chopped celery
3/4 cup chopped carrot
1/3 cup water
3 tablespoons brown sugar
3 tablespoons mustard (I use stone ground)
3 tablespoons vinegar
3 tablespoons Worcestershire sauce
1 tablespoon chili powder

Cook turkey with onion and garlic, drain off extra fat.
Combine rest of ingredients with turkey, mixing well. Cook 45-60 minutes, until vegetables are cooked through.

Serve with hamburger buns.

You can sometimes find a container (Trader Joe's) that has chopped carrot, celery and onion.  I will often use this instead of cutting everything up- speeds up the prep part of the recipe.

Banana Bread

1/2  cup butter (melted is fine)
1 cup sugar
2 eggs
2 large bananas (I always have a stash in the freezer, just let them thaw for a few hours).
1/3 cup yogurt, I like using Greek
1 tsp baking soda
2 cups flour
pinch of salt
1 1/2 cups chocolate chips (optional)

Cream butter and sugar.  Add eggs, bananas and yogurt.  Mix well.  Add dry ingredients.  Put the batter in a greased loaf pan. 

Bake at 325 for 1 hour.

You can also make this recipe into muffins.  Bake at 400 for 20 minutes.
